Of late, my favourite "go-to" pizza place is Gattopardo Italian Grill & Bar. Why I like the pizza here is that it serves up Neapolitan-style pizzas baked in an impressive huge brick-oven, offers a wide selection offering both traditional and unconventional toppings and most importantly, has an authentic taste. Because an authentic Neapolitan pizza is really quite hard to find around Singapore, I am glad I found Gattopardo and its central location in the city certainly adds loads of bonus points for me.
My favourite part of the pizza is (carb-freaks alert) the crust. At Gattopardo, the pizza crust is crisp with a texture similar to tandori naan so it is slightly soft, yet with enough chew and bite, which, to me is a whole lot of satisfaction.
I have tried quite a few variety already (beyond the two mentioned here in this post) and to be honest, I think I prefer the traditional ones more than the unconventional ones.
The latter, while sounding mouthwatering on paper, just could not cut it for me. For example, the Salento (first picture) could do with a whole lot more burrata (though what was on the pizza was certainly very good) and I wondered (and still cannot get it) what the mussels were doing there.
The traditional ones on the other hand, have the (unfair) advantage of being tried and tested, so what is there not to like when the foundation has been built and on such awesome crusts?
The Vegetariana was expectedly good because of the sweet and salty contrast between the generous amounts of fresh mozzarella and sweet roasted vegetables. But I was impressed most because of the thought behind this pizza. For example, I noted a slightly thicker crust here but didn't know if it was because the pizza chef had an off day, or something. Later, I learned that it was intentional because the vegetable toppings were more watery and thus needed something stronger to prevent the pizza from "limping". To think I had initially wronged the chef!
Although Gattopardo is still in its infancy stage, the menu has already gone through a revamp reflecting customers' feedback and preferences. Commendable indeed but if only the one pizza that I loved (mozzarella, anchovies, capers) was not struck off. But all is good when we got assurance from Alex, co-owner and general manager, that we could make a special request whenever. Phew!
